easy tomato and chickpea sauce

Ingredients:
Tomato puree/passata (1 can/carton)19858754_10212963283652449_774805549_n
Chickpeas (1 can, rinsed)
Garlic powder (1/2 tsp)
Paprika (1.5 tsp)
Cayenne pepper (1/2 tsp)
Cajun spices (1/2 tsp)

Optional:
Other herbs, and spices, onion, veggies, etc

Method:
Simply add all ingredients into a pot and leave on medium/low heat until cooked through. Season to taste and serve with pasta, potatoes, wraps, etc!

tomato and olive pasta bake

Ingredients:
Pasta (as much as you want to eat)
Tomato paste/puree (enough to cover pasta)
Oregano (1-2 tsp)
Marjoram (1-2 tsp)
Olives (black, stones removed, as many as you like)
Salt & pepper

Optional:
Cherry tomatoes, basil, spinach, onions, vegan cheese, other veg or herbs

Method:
Cook pasta according to instructions.
In baking dish mix pasta, tomato paste, herbs, olives, salt, pepper and anything else you want to add.
Bake at 200C for 30 mins or until brown and crispy on top.

lentil bolognese

Ingredients:
Onion (1 chopped fine)
Celery (1-2 stalks, chopped small)
Garlic (1-2 cloves)
Chopped tomatoes (1 can)
Carrots (1-2, chopped into small chunks)
Lentils (150g dried- for a deeper flavour use dried green puy lentils, but canned lentils also work)
Paprika (1 tsp)
Olive oil
Salt & pepper

Optional:
Mushrooms, fresh tomatoes, peas, courgette, other veggies.

Method:
Fry onion and celery for a few minutes and add in carrots and garlic.
After a few minutes add in lentils (these can also be added with carrots and garlic) followed by the paprika and chopped tomatoes.
For the best flavour its usually best to cook the bolognese for a long time (4+ hours on a low heat) but it can also be eaten as soon as lentils are cooked.
Season to taste and serve with pasta.

cowboy bean stew

Ingredients:
Onion (1, thiny sliced)
Pepper (1, thinly sliced – a mixture of colours is good)
Beans (1 large can of white/brown/black beans)
Green beans (large handful)
Chopped tomatoes (1 can)
Sweet smoked paprika (2 tsp)
Chilli (1/4 tsp)
Olive oil
Salt and pepper

Optional:
Paprika
Hot sauce
Mushroom ketchup
Onion powder
Garlic powder
Tomato paste
Fresh tomatoes

Method:
Fry onions until soft, then add peppers and fry until cooked.
Add paprika, chilli and lightly fry – add a little water if necessary.
Add chopped fresh tomatoes if using, or just the can of chopped tomatoes and cook for 5 minutes.
Add green beans and a little more water if necessary.
Cook for another 5/10 minutes and then add in the brown beans.
Adjust flavouring to taste and season.
Serve with rice, baked potatoes, bread, etc.

summer pasta salad

Ingredients:
Red onion (1 small)
Peppers (1 medium)
Courgette (1/3)
Cherry tomatoes (10)
Walnuts (4/5)
Sunflower Seeds (1 tsp)
Cucumber (2 tbsp)
Penne (however much you want)
Olive oil

Optional:
Whatever veg you have should be fine.
Herbs and spices are welcome but not necessary.

Method:
Cook pasta according to directions on packet. Leave to cool or serve warm.
Chop the onion and peppers into strips and fry in olive oil.
Allow whole cherry tomatoes to fry a little.
Chop courgette into blocks and fry until golden and cooked.
Roughly chop walnuts and sunflower seeds.
Cut cucumber into small cubes.
Mix everything together, halving the cooked tomatoes. Add extra olive oil and season with salt and pepper.

pasta with cherry tomatoes and rocket

Ingredients:
Pasta (any type of pasta is good with this, however much you want)
Cherry tomatoes (a handful or two)
Rocket (as much as you like)
Oil (olive oil or truffle oil are good)

Optional:
Garlic
Peppers
Olives
Seeds (good replacement for a cheese-like flavour)

Method:
Cook pasta.
Whilst it cooks, heat a pan with a little oil and lightly fry the tomatoes (halve them if you’d like).
When the pasta is cooked, top it off with the tomatoes, rocket, salt and pepper and a little oil and enjoy!

chili sin carne

Ingredients:

Canned tomatoes (1)
Beans (Kidney beans, black beans, black eyed beans, any beans you like 1-2 cans)
Paprika (1 tsp)
Cumin (1/2 – 1 tsp)
Chili (1/2-1 tsp)

Optional:
Onion
Peppers
Sweet corn
Other veggies
Other spices
Hot sauce

Method:
Cook down the can of tomatoes a little and add in the spices. Add in the beans and cook for a little longer. Season to taste and serve with rice, tacos, tortilla wraps, baked potatoes, avocado, whatever you like!

bruschetta

Ingredients:
Tomatoes (1-2, cut into small cubes)
French bread (1/2-1 loaf cut into slices, ciabatta or any other similar bread would be good here)
Herbs (oregano and basil are good, but whatever you have and fancy)
Olive oil
Salt & pepper (to taste)

Optional:
Onion, peppers, anything you like. I like plain tomatoes but whatever you fancy.

Method:
Fry the slices of bread in a little oil, or bake until crispy.
Mix tomato, herbs, salt and pepper.
Top bread with tomato mix and enjoy!

tomato veggie stew

Ingredients:
Potatoes (2 med, however many you want, I like them chopped small)
Peppers (1 red, 1/4 green, 1/4 yellow for a colourful mix)
Carrots (1-2)
Mushrooms (a handful)
Tomatoes (big, small, however many you want)
Chopped tomatoes (1 can)
Paprika (1 tsp)
Herbs (oregano, basil, thyme, whatever you got and like)
Oil (1 tsp, any is good)

Optional:
Celery, onion, courgette, aubergine, any veggies are good.
Kidney beans, butter beans, any beans are good too.

Method:
Chop up veggies however you like (I like large bits of pepper and small bits of potato, but you do you).
I like to fry the potatoes a little bit first and then add in the rest of the veggies. Once they’re cooked a little, add in the can of tomatoes and the herbs/spices.
Leave to simmer for 30mins or so, just check on it and see how it’s doing- add water if it needs it.
Season to taste and serve with rice, mashed potatoes, baked potatoes, on pasta, with bread, whatever you want!
